Ie-kei ramen is done very well at Suehiroya. All the major targets are hit; deep tonkotsu soup, luscious chashu, and just enough greens to give you a vitamin or two. I’m very particular about this style of ramen, but recently I’ve only been going to the highest-ranked shops, so my journey has been a relatively good one. No random ie-kei chains in the countryside, only the best-of-the-best for me!

Though chashu at ie-kei shops tends to be worth getting extra, this was my second bowl of the day and the regular, 700 yen ramen was probably a good move. Purple and lime green mean more noodles. Pink, green, and grey have triple the pork.

家系, or ie-kei, is your Yokohama-style ramen. It almost always has this kind of plastic ticket ordering system.

The chashu was begging to be taken home. Moments after snapping this shot, the master yelled out, “We’ve got four slabs left to take home! Any takers?” I quickly dropped an extra 3000 yen for one of these beauties. I’d spend the next week snacking on chashu at home.

Rich soup made with pork and chicken.

This is your standard bowl, but there are a few topping choices that come recommended. The homemade menma takes four days to make and is a top seller. Spicy negi green onions can add a bit more green to your bowl. Extra pork is another winner. Fresh wakame seaweed, kikurage wood ear mushroom, and corn are other choices.

I think I need to start going big on the topping orders at my ie-kei shops. The greens are such a good match for the intense soup. The soup at Suehiroya is a bit sweeter than other shops in this genre.

Suehiroya is very highly ranked. I just checked the ramen database, and they are number 16 in their category. That category, tonkotsu shoyu, includes Jiro aka the ranking breaker (Jiro shops automatically get highly ranked by their ravenous fans). If you only look at ie-kei, they are more like number four in the country. Not bad!

You’ll always find condiments to spice up your ramen at shops like this. Garlic, odorless garlic (無臭にんにく), and a special sauce.

Not only do they pay respect to the original Yoshimuraya with 家 in their name, they literally advertise their connection to 吉村家 on their sign.
