啜磨専科

Susurimasen is part of the G-Men-7 group (G麺7). Four shops, all in the Yokohama Kamioka neighborhood (横浜上大岡), and all of them ranked very high among the ramen critic of Japan. G麺7, 啜磨専科, ロ麺ズ, and 川の先の上 are all great, but which one are you trying first?

You might want to start with the one shop in the group to be included on the 2022 Tabelog Top 100 of West Japan list. Susurimasen, which translates as “special sipping course,” is a small shop specializing in shio tsukemen. Quality noodles with a robust salt-based dipping soup.

The choices are pink or blue. Pink comes with hot soup and blue with cold. It’s just a matter of preference. Normal and small size. They also have a shoyu version, shio and shoyu ramen, and soupless tantanmen. Oh, everyone in the G麺7 group does limited bowl on a regular basis. Check Twitter for the current slurps.

Two colors of noodles, one with 40% whole wheat flour, match the deep soup very well. We’re used to thick noodles in tsukemen and something like this is a nice change of pace.

Specialty salt from Vietnam, by the name of Snow Queen. This particular salt is made in Thanh Hoa Province using the same method as French Guerande salt. Shallow pools are filled with salt water and left to dry out for harvesting the crystalized salt. Ocean salt is very high in minerals, especially if the ocean it comes from is clean and protected.
