烈志笑魚油 麺香房 三く

Sanku, whose full name is Resshi Shoyu Menkobo Sanku (烈志笑魚油 麺香房 三く) is one of those shops that looks interesting in photos and then completely blows you away when you visit. Roasted malt sprinkled on the noodles? It works.

Right down the road from another favorite shop, Ramen Kozo.

I was all about their unique tsukemen (全粒粉つけ麺). That roasted malt. Though the whole shop smells like rich niboshi soup, this gives the noodles a nice earthy aroma. It also takes them to the next level of Instagram likeability. The noodles themselves come from Hokkaido-based Nishiyama Seimen (西山製麺).

Enough about the noodles. The soup at Sanku is for the most part niboshi. The tsukemen version has pork and is spiked with shiso leaves for an herbal kick.

By the way, every hour at the 39th minute, aka the san ku minute, the shop staff hands out free desserts for everyone. Don’t stress if you time it wrong, but maybe you want to try and time your slurps for a little something sweet.

Though I had the excellent Tsukemen, the standard menu order would be the kake (かけ), a bowl of ramen with an intense niboshi broth. Domestic dried fish is soaked in alkaline water for a day to extract the maximum amount of umami. YOu can change the flavor as well, with some medicine. Medicine? The shop’s homemade shichimi spice mix is called medicine, so ask for kusuri hitotsu (くすり一つ) if you want some.

Sanku was another shop on the Tabelog 100. Be prepared for a lot of these shop reviews to be coming. I spent a lot of time in 2022 visiting shops on this list.
