煮干そば 藍

Back in Kyoto and back on the ramen grind. While the city is known for rich and creamy chicken ramen as well as a classic shoyu style, there are many outliers that deserve recognition. Niboshisoba Ai is a sardine-rich bowl of simple, flavorful noodles.

Ai (藍) is the word for indigo dye, hence the blue motif.

Both a light and heavy niboshi bowl, tsukemen, and some unique mazesoba are on the menu.

The light niboshi soba made with dried sardines from nearby Kagawa Prefecture. A simple, refreshing slurp.

The shop is decorated by artist Shogo Iwakiri. Mathematical designs inspired by Central America’s native cultures.

For that simple bowl, choose the upper left button. It wasn’t a gut-filling meal, meaning you could easily do another bowl after this one.
