麺や厨

Clear is a popular Shizuoka ramen shop that focuses on chicken ramen. What kind of chicken ramen?

Ottori (おっ鶏そば) is their creamy chicken paitan. Chickens and plenty of chicken feet are cooked for 14 hours. Thick homemade noodles have a nice texture to go with the soup. This is the shop’s most popular bowl.

Shittori (しっ鶏そば) is their standard shoyu ramen. Craft soy sauce and real mirin (most shops use fake-ish stuff) round out the tare seasoning.

Nettori (ねっ鶏そば) is their mega-thick paitan. The soup takes around two days. Hope you like it thick!

Bettori (べっ鶏そば) is their tsukemen. Fishy gyokai soup is paired with their thick chicken broth.

They also have shrimp tsukemen and a Taiwan-style mazesoba.

I went with the shop’s most popular Uttori.

Something unique about this one was the razor-thin slices of red onion on top. The onion melts into the soup, giving some sweetness and texture.

There was a Shizuoka katsuo campaign going on at the time. A dozen ramen shops did limited katsuo skipjack tuna ramen bowls. Slurp a bowl, get a stamp.

Side note, this strawberry IPA from local West Coast Brewing was one of the best beers I’ve ever had. Like the katsuo ramen, though, it had a limited run.

Locals love this spot, and the massive menu plus limited bowls mean it’s a good regular ramen bowl to return to if you are local to Shizuoka.
