博多ラーメン ばりこて

Real Kyushu-style ramen is surprisingly uncommon in the Tokyo ramen-sphere. There are plenty of tonkotsu-gyokai places, but not a lot, apart from the chains, that do a creamy tonkotsu with thin, low-hydration noodles. Barikote in Koenji is a nice example of this style. Kaedama anyone?

The soup is a 100% pork bone broth simmered for 16 hours.

Rich. A solid bowl. The master is from Fukuoka and strives to serve something that locals (locals from Kyushu that is) would feel some nostalgia about. It’s a lighter-than-average soup, in order to bring out a bit more of the pork’s umami. Too creamy and the soup is too over-the-top with the fat flavors.

I was streaming on Twitch for this one, and one of my viewers wouldn’t shut up about the kaedama extra serving of noodles that is a mainstay for this kind of ramen. These days, I try not to overeat, and kaedama is rarely a part of my life. You gotta give the people what they want, and an order of barikata (very firm) was a small price to pay.

Some snacks like gyoza and otsumami plate mean this would be a nice spot to pop in if you lived locally. On a random side note, this shop has a general no media policy, meaning they reject offers to be featured in magazines or television.
