豚そば月や東京

Clear tonkotsu soup is on most ramen hunter’s radars, with Rai Rai being the holy grail. For those who don’t want to fly to Fukuoka, take an hour train ride, book a cheap hotel, and wake up at five in the morning for a bowl of this style, just head to posh Hiroo, a city within Tokyo. Tsukiya (or is it Getsuya?) brings this unique style to Tokyo.

The shop’s kodawari is to highlight Kyushu. Shochu and nihonshu come from Kyushu. The bowls are Aritayaki porcelain from Saga Prefecture. Though Kyushu is known for creamy pork broth, the style here is clear; a low-temperature simmer, meant to bring out the subtle flavors of the pork.

Noodles are shipped in from Fukuoka. Low-hydration thin guys that match well with the pork soup.

Visually, a very beautiful presentation. Soup, noodles, and a line of thinly-cut chashu pork. Some sparse toppings are served on a separate plate.

A stylish bowl of ramen in a stylish part of town. Hiroo is where many foreign embassies have their address, and the town reflects the wealth of the world’s governments. My friend’s apartment there requires multiple security checks to get to his door. Years ago I worked at a children’s school here and never saw a parent, only hired nannies. The Mormon church has a massive compound just next to the park. And now we have some tasty ramen.
