マグロ卸のマグロ丼とラーメンの店ウミノイロ

Uminoiro, produced by Soranoiro and a fish restaurant, was given a lot of praise by ramen critics when it first opened.

Tuna Wholesalers’ Fisheries Terrace (マグロ卸のフィッシャリーズテラス) teamed up with Soranoiro for this one. I haven’t been to the original shop, out at the Toyosu fish market, but it looks rad. Snacking on fresh tuna bowls, called maguro don, right next to the water sounds great in the warmer months.

Tuna ramen? No, it’s shrimp. A thick soup made from left-over shrimp shells. There is a lot going on here. Homemade shrimp powder. Olive oil and herb roasted chicken shashu. Half-cooked eggs marinated in dashi. A soft-shelled shrimp topping.

There is also a lighter clam-based broth. The shrimp was the more popular of the two.

So much going on. The whole thing is a shrimp explosion tinged with little flavor enhancers.

In an homage to the maguro don shop you can order full rice bowls as well as ramen. For those who just want a taste, 100 yen gets you an XXS-sized rice “bowl.” It’s just a single bit served in a ramen spoon.

Fun concept, but I don’t think I’m a fan of these shrimp styles. I like a nice bisque soup before a meal, but when the entire meal is said bisque, it’s a bit much.
