らーめん 香澄 阿波座本店

 

I’ve been seeing these signs a lot recently. I made it a mission in 2022 to complete the list of Japan’s Top 100 ramen shops (actually 300) called the Hyakumeiten (百名店). Yes, I finished, thanks to spending around 40 days in Osaka over the course of a year. Kasumi is no rookie to this list, having been given “Best Ramen” awards since well before this list existed.

Niboshi ramen or niboshi mazesoba. Personally, I’m crazy about soupless mazesoba and had to go with my gut. They also do occasional limited (限定) bowls, just not on his day.

Mix it up! The shop’s special point is its chashu cooked with aromatic vegetables over low heat. The niboshi comes from Chiba, Nagasaki, and the Seto Inland Sea. This niboshi really shines in the mazesoba, along with the dark tamari shoyu. A lot of impact in this bowl of ramen.

Mazesoba is fun and easy. I can always hit up another ramen shop if they serve this stuff. My 2nd stomach (別腹) fits another 150 grams of noodles if there isn’t any soup to speak of.
