RAMEN FACTORY TORISETSU

Torisetsu is a highly-ranked ramen shop out on the western reaches of Tokyo. Their creamy tori paitan is a bit of an artistic expression, with flavorful accents served alongside the Instagram-worthy bowl. Most ramen that looks good in photos tends to taste good in mouths, and this was no exception.

Creamy tori paitan chicken soup, clear shoyu soup, and spicy miso are the main choices. Something for everyone.

Topping situation on point. On the noodles, you’ve got young corn and dried chicken flakes. On the brim of the bowl, smoked chicken tail (chicken butt sounds wrong) and seasonal pickles. Talk about a party!

Let me “explain” the soup. The name of the shop, Torisetsu, is an amalgamation of 鶏扱説明書 (toriatsukaisetsumesho) which is a cute way of rewording 取扱説明書, meaning instruction manual. So this shop’s name is Chicken Instruction Manual. I love it.

The soup is a combo of 100% chicken broth and umami-rich seafood and vegetable potage. Three kinds of salt, including French and Okinawa varieties, give the tare its flavors. The final product is mellow and smooth.

The little chicken bit bites were a fun addition. Not really anything that took away from or added to the ramen, but just some tasty snacks to enjoy.
