地球の中華そば

When ramen chef Masamichi Higami (樋上正径) opened his own shop at age 35, few could have guessed that his new store Hoshino Chukasoba (lit. The World’s Ramen) would have been such a hit. But they were. They were given a rookie of the year award, and the news spread. The ramen nerds descended from around Japan.

So many Ramen Rally stickers! These are still a thing. How many have you collected? These little square stickers are a way for fans to mark their territory. You’ll see them on ticket machines around Japan like some kind of ethical graffiti experiment. If you see a lot, it is usually a good sign that the shop is going to be a winner.

The ticket machine has choices galore from simple shio to tantanmen to niboshi-heavy tsukemen. The award-winning bowl (this shop is one of the highest-ranked ramen shops in Japan) is the shio ramen. The upper-left button on the machine will get you a bowl of their shio ramen topped with a mix of shrimp and pork wontons.

The shop’s shio tare is made with three kinds of salt. The earth is 70% ocean, so the mix here is a 7:3 ratio of sea salt and land salt. Okinawan Shimamasu (シママース), Tengaiten rock salt (天外天塩), and Uminosein sea salt (海の精) are dissolved with umami-rich ingredients like oyster and shitake mushrooms. The soup is a mix of specialty chicken, pork, beef, and oyster that takes around five hours to make. Noodles are made in-house with a blend of domestic flour.

Two kinds of wontons. Meat and shrimp. If you order the MIX option, you’ll get both.

The master trained at Ippudo (一風堂) when he was a student. He also worked at Toride (麺の坊 砦) and had guidance from Saito-san, the owner of Nakiryu (鳴龍).

By the way, if you’ve read this far you are probably interested in checking this spot out. Well, they appear to have moved to a new location. Always do your research, and never assume that a static website like Ramen Adventures is completely current.

I explored the area for a couple of hours, walking along the Yokohama canals. You can grab a charter boat from here and go for a day of fishing. Let’s go! I’ve cruised these canals a few time on my own and can say it is really something special.
