I made the mistake of calling the ramen at Daruma Kitakata-style. This was for a published article, and my editor luckily checked with the shop. So despite the similar characteristic to a top-end bowl of that style let’s just call this one shoyu ramen (醤油らーめん).

And what a shoyu ramen it is. Noodles are made on-site by hand. They roll them out in the morning and hand press them just before serving. Kind of Kitatkata-style . . .

Wait a minute. Noodles rolled on site. Kitakata-looking ramen. Delectable chashu. This looks a lot like Shichisai. The truth is the master here trained at famous Shichisai before opening Daruma. In a case of the student becoming the master, Daruma is now sitting at a much higher ranking on most sites that do rankings.

The chashu is divine, so arrive early for their limited chashumen. It comes with triple the slices of a normal bowl.

Obviously, I didn’t arrive in time. Just like Shichisai, get the extra pork if you can. Make sure you also get an egg. Bright orange yolk for dessert.
