Two aspects of a Brian-wants-to-go ramen shop are here. Soupless Jiro style is my favorite junky ramen. For some reason, if you take away the soup, but leave the pork back fat and MSG-rich sauce, I’m in. Secondly, the name is incredible. Hyper Fatton? What’s going on here?

Like most Jiro-style shops, you should order the mini ramen if possible. Mini, in this sense, is only double the size of a normal bowl. Clocking in at 200 grams, this is anything but small. Don’t let the naming scheme fool you. If you want soupless, there is often a service charge. Pay an extra 100 yen to get it without soup. I’m not sure why they do this, but they often do. The top ticket, clocking in at 50 yen, is for some fresh ginger. Soupless styles usually have a few extra topping choices. Buy them all.

Fatton (or is it Phaton?) opened in Yokohama in 2015. In 2017, Hyper Fatton joined the group. A third Fatton joined the team in Shizuoka in 2020 with マゼの極みTHE FATTON.

Now that is what I’m talking about. The style is officially dubbed F-style by the folks at Fatton. J-style and G-Style (Jiro-style and Gatsuri-style) have become buzzwords lately, referring to heavy ramen with plenty of garlic and pork. Hyper Fatton doesn’t want to be seen as a copycat it seems.

Tender, mostly-fat pork. Umami-rich katsuo flakes. Fried onion bits. Raw egg. Mix it all up and enter pure bliss. I was particularly happy that the “vegetable” topping was more cabbage than bean sprouts. It just seems a bit more healthy.

Attractive bonus, and maybe not relevant if the Corona thing is over, but you could get the soupless style to take home with you. Ramen sans soup will hold up much longer, and as long as you’re planning to eat within a few hours, you should be good to go. Get it? To go. Sorry, the MSG is messing with my brain.
