Santora quickly became one of the hottest miso ramen spots in Tokyo after opening in 2019. Will this be the one to beat? I visited after meeting up with ramen superstar Susuru for sushi. This was one of his favorite bowls of the year. Check out my YouTube video! Like and subscribe!

The master, Sugawara-san (菅原さん) ate at miso legend Sumire when he was in his 20s. It was a bowl that changed his life. He went on to be the head of the Sapporo main store, the Kyoto branch, and the Sumire at the Shin-Yokohama Ramen Museum. Now, 17 years later, he has his own shop with the noren curtain proudly saying that this is a shop descended from Sumire. This is only the second shop to have that honor, with Oshima being the first. This is a big deal in the ramen world.

Though all accounts say the shoyu and shio are excellent, I gotta go miso. Two kinds of white miso from Sapporo and a lot of lard make this one a little slice of Hokkaido in Tokyo. The lard keeps the soup piping hot. Slurp with care. The soup is a pork/chicken/vegetable/fish thing in line with the original Sumire style. Santora, though, is like a Sumire 2.0, with lighter white miso for a fresher taste. Noodles come from Nishiyama, a supplier of curly noodles around the world.
