白河手打中華そば 法隆

Horyu is one of the dozens of shops in Japan that originated at Torashokudo in Fukushima. Legendary hand smooshed noodles with a light niboshi shoyu soup. This is a labor-intensive style of ramen that, if executed well, is a sure-fire way to win a top spot in Japan’s ramen scene.

In this case, the shop is Tora-style (とら系). This is more of a second generation of Tora ramen than a direct recreation. People can (and will) nitpick these details to death. If you can discern the differences without tasting them side-by-side, more power to you.

It’s fascinating that a humble countryside shop can lead to a mini-empire of ramenyas.

Get it with extra pork and/or wontons if that is your thing. A simple menu for a simple style.

This shop isn’t too hard to get to, but it will take you about an hour and a half from central Tokyo. Driving will take half that time.
