There’s a new mini-trend at ramen shops in Japan. If you normally close up for a day off on Monday, why not let someone else use the restaurant that day.

Raik (full name Bonito Soup Noodle Raik) in Eifukucho serves an excellent dashi-based bowl of ramen. Rabo in Nishi-Shinjuku does a solid bowl of chukasoba in an unassuming shop that is at the top of many ramen hunter’s lists.

The Monday-only ramen is a special blend of different niboshi. Sardines from Chiba and Nagasaki. Flying fish from Kumamoto. Mackerel from Nagasaki. A special blend of soy sauces is simmered to make the tare seasoning.

Fantastic bowl topped with three kinds of chashu and egg if you get the special (特製). There’s also a nice slice of flavored lotus root to set this bowl apart. Monday Rabo was included on the 2020 Tabelog 100 list, making it a must-hit for hard core ramen hunters.
