らーめんMAIKAGURA

Maikagura is a highly-ranked ramen shop known for its tori paitan broth. They have a few choices, but the “crema” version is particularly interesting. Creamy chicken heaven in west Tokyo.

This shop is on many best-of lists, most notably they are the number one tori paitan shop in the well respected TRY magazine. Unfortunately, they serve tori paitan spiked with truffle oil. Fortunately, you can order it without such an unnecessary topping.

Regular tori paitan for 880 yen and the crema version for 950. I gotta go with the crema.

The creamy chicken soup is made from only chicken and water. They use a special filtration system called RO水. I found this site with an explanation of the merits of this water here, but the gist is that RO stands for reverse osmosis. By filtering water through a special membrane, you essentially turn it into “pure” water. It has less flavor than mineral water, but the process can be an advantage when making soup.

I’m not sure why, but after I ordered the Crema, the staff marked it as sold out. I guess there are a limited number of times they can use the espresso steamer machine. While some tori paitan shops whip their soup into a froth with a blender or hand mixer, Maikagura steams the heck out of it.

They also have a duck shoyu ramen that was excellent. Yuzu shio ramen is also potentially good. It’s no surprise to learn that the master trained at Nakamuraya (中村屋), the famous Ebina shop specializing in yuzu ramen.
