Si激Ya

Sizzling hot tsukemen is the draw at Sigekiya, an institution south of Yokohama Station. A choice of shoyu or gyokai, or a mix of both, is served in a hot iron bowl. Watch your fingers!

Shoyu, gyokai, or a mix of both. Gyokai, aka dried fish and seafood powder, is mildly fishy and full of umami. You should go for it, unless fish is off the menu for you. Of course, if that is the case, you should probably avoid shops like this completely. The 激 in their name, geki, means excited. Are you excited about this one?

There’s that fish powder. I went with the mixed version for a little bit of both worlds. Tsukemen, when the noodles are served cooled down, has a tendency to turn into a lukewarm meal. The soup may start hot, but it’s quickly made tepid by those noodles. At Si激Ya they serve the soup in a hot cast iron bowl. No chance this thing is cooling down anytime soon!

Be careful with those slurps. Even the most professional ramen eater could get burned on this one. Dip a few fewer noodles, and take it slowly from soup to mouth. You’ve been warned.
