麺や兼虎

Kanetora is perhaps Fukuoka’s most celebrated tsukemen shop. Tonkotsu gyokai served with thick noodles is considered a Tokyo thing. For this reason, the shops around Japan that go against their local style to serve tsukemen usually do so in a big way. Bring on the flavor!

Noodles from Mikawaya Seimen, considered the top of the noodle factories in Japan. Most shops that buy from them proudly display their noodle boxes outside their shop.

Fukuoka is a very international city. Actually, many Asia tourists love heading to Kyushu, and Fukuoka International Airport serves them all. You can also catch a ferry from here to Shanghai or Busan. Choose your language and get your slurp on.

This is soup wari!! Bonito soup to cut down the thick dipping soup.

Thick tsukemen noodles with high hydration mean chewy and big. Standard Hakata-style noodles, on the other hand, are low hydration and more stringy and brittle.

The soup at Kanetora is pork heavy, with chicken bones, vegetables, and dried fish to round out the underlying flavors.

Looks spicy? Fortunately, that isn’t an entire mountain of chili powder. It’s a thin layer of spice on a mountain of dried fish. Umami here we come! Of course, you can choose your spice level if you want the mountain to be more of a volcano.

A nice change of pace from the usual tonkotsu in Kyushu.
