支那蕎麦澤田

Top-notch shinasoba-style ramen can be found all over the greater Kanto area. This usually means a bit of a trek on the train. Not anymore. Sawada plopped themselves right in the middle of Shinjuku.

Although he doesn’t advertise it, the master here trained at Yakumo, a shop that is well-known for its wonton-heavy bowl of shoyu ramen.

I ordered the standard, a shoyu ramen (醤油ワンタン麺) made with five different soy sauces. After the fact, I learned that the white shoyu ramen (白醤油ワンタン麺) is the one people gravitate to, with a lighter white soy sauce as the main flavor. Regardless, this was a very nice bowl. Clean and refined. It’s such a common style these days, though, and I feel like I’m getting a little tired of it. That said, the location can’t be beaten, just a few minutes from Shinjuku Gyoen Park and all the shopping and fun that is Kabukicho.

As always, Shinasoba means excellent wontons. A regular order comes with a few pork wontons and a few shrimp wontons. I kind of wish they had a menu option for wonton soup. It’s common for shops like this to offer a bowl without noodles, just seven or eight fat dumplings. It’s something I could jump into anytime I’m in the area.
