ラーメンかいざん

Kaizan’s ramen is a mix of fatty pork, oily soup, and bits of seabura (pork back fat) alongside fat-neutralizing spices and greens. It’s a Funabashi institution and is frequently on television shows, at least when the topic is Funabashi. Ah, Funabashi. Disneyland, the minor character Funashi, and msg-laden pork ramen.

The accolade that drew me in was one from back in 2011. Kaizan was ranked number two out of 39,000 across Japan by Ramen Walker Magazine. Although I’m currently searching out highly ranked ramen shops from this decade, it is good to visit the old-school champions.

Chiba-style pork bone ramen was made famous here. Or maybe I should say pork bone ramen in Chiba was made famous here. In 1988 there were very few tonkotsu ramen spots outside of Kyushu. Kaizan was one of the first in Kanto. They retain their fame and you can expect a long line anytime you visit their shop.

Looking back, I should have ordered it with a mountain of spicy green onions. This style of ramen is complimented with spice and green, both of which were lacking in my standard bowl. Extra wakame seaweed would have been a good choice as well. They offer a negidon (ネギ丼) rice bowl set (second line of the ticket machine) which looks like the way to go. Fatty pork ramen with a side of spicy green onion rice. I think I hit up two ramen shops that day though, negating the desire for extra calories.
