ニシムラ麺

Elevated ramen is the name of the game when French-Japanese-fusion restaurant La Cuisine Creativite Nishimura Takahito rebrands at Nishimuramen during lunch service. Dinner can set you back a few hundred dollars, but lunch is nothing but noodles.

The noodles in question are made in-house. Noodles are matched to the soup, and the toppings are a creative bonus. I went with the chili tantanramen (チリ担々ラー麵). A clear soup with a touch of spicy topping. And some bread. Because . . . France?

The noodles were very nice. You can tell that the chef enjoys making these. From the shop’s homepage to the menu description, the one thing mentioned more than anything else are the noodles. Springy and curly.

Add in some parmesan cheese to further the flavors.

I’m a sucker for anything tantanmen, but the other choices may have fared better. Nira (garlic chive) shio ramen. Duck and porcini tsukemen. Spicy curry to take home. Looking online, I found gorgonzola ramen, carbonara tsukemen, and Nagasaki clam shio. It seems chef Nishimura has a lot of fun creating unique bowls.

Chef Nishimura traveled to France at a young age to pursue French cuisine. He returned to Fukuoka and continued his training at Maison Do Yoshida (メゾンドヨシダ) before opening his creative restaurant. In 2019, he was awarded a star. In fact, it was the only restaurant in Japan to receive a star in the fusion category at the time. So is this another Michelin starred ramen shop? Not really, but the aspects come through. Fortunately (or unfortunately) the menu looks like it constantly changes, so your mileage may vary.
