采 (Sai in Onigoe, Chiba)

Sai is a popular shop out along the Tokyo-Chiba expanse. Expressways, multiple train lines, and plenty of normal roads connect the people living in Chiba with their offices in Tokyo. Any kind of heavily traveled route like this breeds good, comforting food like ramen. Sai is one of those shops.

The menu is big. Shoyu, Shio, Thick Katsuo, Thick Sardine, and three kinds of miso ramen. And you can choose to have it served ramen-style or tsukemen-style. I count 18 different ways to eat ramen here. ヤバイ!

The Thick Katsuo (濃口かつお) appealed to me. It’s not something you see often, and I don’t think I’ll be able to make it back out here to try the other 17 styles anytime soon, so I went with my gut.

This one was solid. The shop makes its own thick noodles. They also make a soup with no added chemical seasoning. Just pure umami straight from the fish.

The noodles were perfect. Thick and wheaty. Check out this antique noodle machine. These things are works of art (in my opinion).

One down, 17 to go.
