Straight from Niigata, Jun opened a shop in Kamata, just south of transportation hub Shinagawa.

If you are familiar with the Niigata style of ramen, you’ll know what to expect. A deep shoyu with lots of fat and raw, diced onions.

The addition of some ishinori on top is a nice touch that you won’t find at my favorite Niigata-in-Tokyo shop Dokkan. Above is just the regular, but next time I would suggest the ishinori chukasoba, with extra rock seaweed.

Certainly good, though the heavy stuff goes down better when the sun has set.
