らぁ麺 すぐる

One of Kyoto’s legend shops is Touhichi (らぁ麺 とうひち). This slightly out-of-the-way ramen joint does chicken ramen to die for. It’s rich, elegant, and a must-hit for any amateur ramen hunter. They switched gears with their second brand, Suguru. The soup remained subtle and refined, but pork took over for the chicken.

The shop quickly garnered attention from Michelin, as well as other ramen-ranking publications. Then, as fast as they rose to fame, they closed. May 2018 until March 2020. Read on for nostalgia’s sake, but don’t think you’ll be able to slurp this one anytime soon lest time travel becomes a thing.

The concept was pork and wheat. Homemade noodles were an integral part of the idea. The soup was a distant offshoot of mega-famous Kyoto-style Daiichi Asahi, also known as Akira-kei (アキラ系). Shoyu, shio, miso, tsukemen. I quite enjoyed the shio and was looking forward to trying more in the future.

A shame, as this was a decent bowl. That said, Kyoto is chock full of ramen varieties of the highest caliber. You’ll easily find an alternative.
