からみそラーメンふくろう

Born in Yamagata Prefecture, spicy miso ramen makes its way down to Nagoya, Japan’s third largest city. The dollop of spicy red miso paste in the middle of this bowl is instantly recognizable to any ramen hunter. Once you get past the big four (shoyu, shio, miso, tonkotsu), karamisoramen (からみそラーメン) is a style all its own.

The shop claims that they adjusted the flavor from the Yamagata roots to something that suits the people of Nagoya a bit more. You can compare it with the original Ryu Shanghai by clicking my link here. While the OG spot opened in the late 1950s, this Nagoya shop opened in 2013. Not even old enough to order a beer with all that spice, but old enough to have dominated the market share on karamiso.

A pork and seafood broth is blended with mild miso to make the base soup. Have a sip of the broth and mix it up. The spicy miso ball in the middle isn’t much if your mouth is used to spice from anywhere else in the world, but it has a kick. You can order extra scoops for a buck or so.

The shop has been visited by celebrity foodies and TV talents over the years. Since opening, they have gone on to create a kind of franchise system where they supply everything you need to make Fukuro-style ramen. I counted 37 shops across Japan on their website. In 2022, they established a company in the USA, with plans to bring spicy miso ramen to the masses. I could see some late-night spicy miso joints in college towns around the country.
