麺元素

Mengenso in the Tenma area of Osaka prides themselves on a 100% natural bowl of ramen. Mengenso means noodle (麺) element (元素) and the concept is simple. Simple fish ramen and simple chicken ramen made with a lot of care.

Just follow the nice fellow in the suit and necktie.

You can choose from the two types of soup, or you can go for the naka naka (中々) blend of both. The naka naka also makes your choice of salt or soy sauce easy with a mix of both seasoning liquids. Creamy broth made from chicken (or pork for that matter) can get a bit funky, so the master uses Korean ginseng to mellow it out. Noodles are housemade with a blend of flour called Shuran (秀蘭) from Showa Flour Mill and udon flour for extra elasticity.

The whole thing is similar to Ramen Yashichi (らーめん 弥七), another Osaka ramen shop doing a chicken with fish soup style.

If you aren’t planning on eating more at another ramen shop (I’m often hitting up two or three ramen shops a day when traveling to Osaka) you should order the shop’s lettuce fried rice. A half order of fried rice, a bowl of ramen, and a beer sounds like a nice day in Osaka. Mengenso also serves tsukemen and limited cold ramen during the summer months called hiyahiya (冷冷 or maybe 冷々).
