Sagamihara 欅 〜HANARE〜

Mere minutes before crushing this bowl at Keyaki Hanare, I tried the miso ramen at Keyaki. Hanare (離れ) means separate from, and restaurants use it for a second shop that usually has a slightly different concept. This hanare has a few similarities and a few different choices when compared with the head shop just down the road.

Shoyu, shio, tsukemen, and mazesoba are all regular menu items. I’m a fan of mazesoba and can always crush an extra bowl of soupless ramen, even on a semi-full stomach. Let’s try it.

There are also frequent limited bowls at Keyaki Hanare. Maybe next time. For now, the pork back fat (背脂) mazesoba is the one.

That white stuff occupying the upper quadrant is silky smooth pork back fat from Kagoshima Berkshires (黒豚), an ingredient I love. It’s also an ingredient that can make you have some . . . ummm . . . digestion issues if you aren’t used to it. Slurp with caution. The housemade rayu chili oil balances with the creamy fat quite well.

Homemade noodles are the star here.

The concept at the shop is odasaga (オダサガ), a shortening of Odakyu Line Sagamihara Station. It’s a local saying for the local area. Noodles are made fresh every day and the pork is domestic.

I noticed, on the way out, they have a bunch of craft beer cans in the fridge. This was during COVID times, and alcohol was off the menu at many places, so I couldn’t partake. Too bad. Mazesoba and beer is a nice combination.
