A return to the absolute legend. Tomita is, perhaps, the most famous shop in all of Japan especially since the Documentary Ramen Heads brought some insight to audiences around the world in 2018. The hype is real, folks. This is some top-tier tsukemen.

If you’ve been before, you might want to go again. While Tomita made a name for themselves with a rich tonkotsu gyokai soup, they had a bit of a renewal in recent years and are now doing a more porky soup with an emphasis on locally sourced premium pigs.

A plethora of awards sit under Yamagishi’s portrait. The godfather of tsukemen styles was also Osamu Tomita-san’s teacher. I won’t bother naming the awards, as it is basically all of them.

Noodles are made in-house with Japanese flour from Hokkaido and the soup is a heavy broth from local pigs. Master Tomita-san blends the soup each day with newer stock and older stock to achieve what he thinks is a perfect balance.

The extra topping set has four pieces of Tokyo-X pork and homemade shumai. The quality is superb on this one. I’m not someone who goes for massive topping sets, but I make an exception at Tomita. Tokyo-X is a brand of pork made by cross-breeding Beijing Black pigs with other domestic pigs over the course of seven years until an exceptional new class was created. This pork has more marbling than others and is only sold within the greater Tokyo area.

The cost is on the higher end of things and 2300 yen for a normal bowl with the extra topping set. Splurge, if $20 is considered a splurge, and feel happy about your decisions in life. You made it! Of course, you could visit one of the 11 other Tomita branches, but the honten in Machida is where the master serves his ramen, and the quality is as good as always.

Make sure you reserve your place online in advance through Omakase. There was a time when seats would sell out shortly after becoming available, but it seems like you can somewhat easily get a timeslot to your liking these days.
