Known for their tanmen, Hatsune is a refreshing stop among the strong-flavored sea of ramen in west side Tokyo.

Tanmen, tantanmen, wantanmen, what is the difference?
Wantan is an alternative spelling for wonton. Though usually in a shoyu broth, anything can become wantanmen by adding wantans, or wontons, or a wanton wontons filled with spicy black oil.
Tantanmen comes by way of Sichuan dandanmien (担担面), and is a spicy soup, often with a lot of sesame.
Tanmen is a mix of sauteed vegetables and meat served on a light bowl of shio ramen. The origins of tanmen are local to Tokyo and its surroundings.
Confusing, but now you know.

Tanmen should be light, with the aroma of cabbage and carrot being the strongest thing going on.

A light bowl for the health conscious, a good place to bring a date, a tonic to cure the sniffles. It is always nice to vary your ramen consumption.
