Motenashi Kuroki is has been consistently amazing over the last 10 years since opening in 2011. The draw has been the shio ramen, which evolves every few years but remains top level for me. As always, Kuroki-san cranks out frequent inventive gentei bowls for the regulars. A must-hit ramen shop in Tokyo.

This is my friend Riley. When I first started streaming on Twitch at the beginning of 2021, he was there with the support. He’s one of the most technically-minded dudes out there, and most IRL (in real life) streamers in Tokyo have some of his 3D-printed gear in their kit. This outing to Kuroki was actually our first time meeting. I wanted to show him some top-level ramen and Kuroki fit the bill.

Shortly after this, Riley was diagnosed with testicular cancer and underwent surgery. Things looked good for a while, but the cancer came back. This time it is more serious. He’ll need to do retroperitoneal lymph node dissection (RPLND), which sounds scary and, as I’ve been told, is. Riley will be out of commission for a while. The tokusei shio (特製塩) is the way to go. Kuroki has raised their prices in recent years, but they’ve also sourced the best ingredients. You get what you pay for.

Three kinds of ocean salt, rock salt, and lake salt are blended to give this bowl its salty punch.

Everything in the bowl is meant to maximize umami. Shrimp wontons are plump and juicy. A little dried tomato gives an acidic accent. Chicken meatball and two kinds of chashu are there for the protein. Stark green Kujo negi adds some color. Homemade noodles, as always.

The upper-left button is for shumai, a recent addition to the menu and a throwback to ramen shops of the 1920s.
