みんみんラーメン

Minmin is a famous Hachioji-style ramen shop in the rural expanse of western Tokyo. The style is easily recognized by the mound of raw onions and dark shoyu-based soup. It’s been around since the 50s. Best to grab your motorized vehicle of choice for this top-class bowl at a shop open for more than 30 years.

I spent the day out around Mt. Fuji. Hachioji is along the expressway on the way home. An easy day out.

We’ve got a big menu going on here. From kakechuka (かけ中華) with no toppings down to extra everything, you can have it your way. FYI, the toppings are spicy negi green onion, menma bamboo shoots, and chashu. Sizes are normal, large, and extra large. There’s only one kind of soup here. Easy.

Negibarachashumen (ねぎバラチャーシューメン) has some extra meat and seasoned spicy green onion. Go for it! This bowl is old-school Tokyo stuff. Two kinds of lard are added to a pork-based soup. The umami is heavy. Who knows how much MSG is added, but I think it’s a perfect amount. Meatiness from the pork, oiliness from the lard, and some sweetness from the onion. If ramen is all about balance, then this one is up there.

Spice it up with extra heat or raw garlic.

By the way, there are many Hachioji-style shops near major train stations, but this old-school shop was something special.
