Unless you are running late for your flight from Fukuoka to Tokyo, you should save a little time for the airport. It’s a big airport, with viewing decks and gift shops and all kinds of airplane fun. Of course, there is an abundance of restaurant choices as well, from national chains to local specialty shops. There’s even an entire ramen alley with seven or eight ramen shops to choose from.

I’ve been to most of the domestic airports around Japan, and Fukuoka is up there with New Chitose aka Sapporo in terms of cool stuff to see. Haneda isn’t bad either.

I wasn’t feeling a big bowl of tonkotsu ramen this time, so I was set my sights on Kyushu-based Mohican Ramen. They had an out of place mazesoba on the menu. Nothing like a garlicky bowl of mix-em-up noodles to give your neighbor on the flight something to think about.

I’ve never made it to the original Mohican, but I’ve had the ramen from this shop a few times at festivals in Tokyo. The master is a character.

Yes, he rocks a healthy mohawk while serving up tasty noodles.

Nagoya Taiwan mazesoba. Spicy ground pork stir fry, green and white onion, fish powder, and raw garlic. Mix it up with the raw egg and go to town. Then catch your flight and get out of town.

Even the small amount of garlic (I asked for only a touch of the stuff) was enough to make me stink for the next 12 hours. I usually pound a glass of apple juice to neutralize the effects, but I couldn’t find fresh juice before my flight. Sorry everyone I met back in Tokyo!

Finish up the leftover sauce with some free rice.

Crushed it.

I actually wanted the limited bowl from the shop next door, an oyster ramen made using a siphon, but it was only on sale until 3:00 pm. I showed up at 3:01 and they rejected me. Next time!
