Enji finds itself in just about every magazine on the shelves. Ramen magazines, of course, but also in all the weekly magazines. What’s a weekly magazine? Let’s just say they’re not for kids.

Yet another in the tonkotsu gyokai tsukemen field. Enji sets itself apart by using a secret vegetable paste in their soup, along with pork, chicken, fish, and even some shrimp. The darker-than-average noodles match perfectly.

I like the use of a bamboo screen in the bowl. Soggy bottom noodles are no fun.

If you’re adventurous, the shop recommends a little habanero spice powder. It ads some serious kick, obviously. If you can read Japanese, you are warned of this fact. If you don’t, you’ll learn the hard way.
