寿製麺 よしかわ 西台駅前店

Yoshikawa, the famous ramen shop from Kawagoe, opened their third branch a little bit closer to Tokyo. It’s still the same great niboshi-centric bowl, but like all good shops that go on to open in more locations, their recipe is slightly changed.

The menu is massive, with fishy bowls for everyone. White or black shoyu ramen. Aomori niboshi ramen. Madai Paitan. It’s a good thing they have photos above each choice. They also have tsukemen and a few different fish-topped rice bowls. Come hungry.

Chemical seasoning-free ramen with dried fish from Chiba and Kagawa. Noodles are made in house with domestic flour.

Save room for a mini sanma soba. It’s only 500 yen but quite small. Raw, seasonal sanma is an oily fish enjoyed in the autumn of Japan. Yoshikawa changes their offerings based on the time of year.

Their limited bowl of buri ramen was spot on. Five stars, or whatever the five denotes, for this one.

Buri, sometimes called yellowtail tuna, is a seasonal fish in Japan. When the fish is young, it’s called hamachi. When it is at its peak fattiness in the winter it’s kan-buri.

If I lived closer to Yoshikawa, I’d probably make it a regular thing to try their limited bowls. Quality fatty fish and a soup full of ocean umami. Kind of perfect. I’m sure they will open a shop closer to central Tokyo someday.

Although this one is way up on the north side of Tokyo, it’s easy to get to on the Mita Line. Enjoy your trip!
