Shibata is one of those shops that you know about for years, but due to their slightly inconvenient location, just never find yourself going. I say slightly because it is only about 30 minutes west of Shinjuku.

A favorite amongst most of the ramen critics, they serve up two kinds of soup; a niboshi style and a normal, classic chukasoba style. Scratch that, an unnormal unclassic bowl.

The stock uses chicken, and duck, for a twist on what you are used to. You might not notice the change in taste, but you’ll probably be impressed.

The duck adds a layer that blends wonderfully with the soy sauce blend. Not a lot of shops use such an uncommon ingredient, but those that do are some of the best slurps in Tokyo.

If you love these simple, but deep bowls of ramen, get to Shibata as soon as possible. By the way, they are ranked on almost any best of list, so expect a bit of a line.
