ラーメンの店 どでん 北浦和店

Do you like what you see? Wheaty noodles topped with juicy pork slices and mounds of pork back fat. What you don’t see is the soup. Welcome to another edition of Jiro-style soupless ramen. While I love junk-style, a soupless ramen topped with junky toppings, these more standard styles are also a treat.

Aburasoba (油そば小). The 小 means small size, which is a bit funny when you realize how much 200 grams of noodles really is. To put it in perspective, the average bowl of ramen in Japan is served with between 120 and 160 grams. This isn’t small at all. This is Jiro.

Ah, the good ol’ how-to-eat (食べ方) sheet that so many shops display. Briefly, it says you should mix up the noodles, then add condiments to tweak the taste. For 150 yen they have seasoned negi green onion. The black pepper and chili oil are free.

The call. Any Jiro-style shop will have a list of free toppings and maybe some rules about how to order them. Make sure you don’t flub this one. The days of Jiro shop masters yelling at you for making a mistake are gone as far as I know, but it’s good to know what you want. Here at Doden things are simple. Garlic (にんにく), veggies (やさい), and pork fat (あぶら). But, in the case of Doden, the maximum amount is called as Doden.

Abura doden kudasai. Give me the extra pork back fat!

My god, it is good. The globs of pork back fat, seasoned with the shop’s MSG-heavy tare seasoning are heavenly. Mix it in with the noodles for a fat and carb feast. Doden’s bowl comes with two types of pork chashu. It also comes with a fair amount of guilt. You only live once, though the number of years may be reduced after this bowl.

As always, crush some juice high in apples to counteract the negative stank of garlic. I swear it works wonders! These seasonal fruit juice boxes can be found in most convenience stores across Japan.
